Description
The wine Viré-Clessé Quintaine is an example of the Guillemot Michel Winery, located in the Burgundy region of France. It is a product of the processing of 100% Chardonnay grapes from the vineyards of one of the Guillemot-Michel family estates.
The work of this family business is characterised by the non-chemical maintenance of the soil and by the rejection of non-natural products, as they consider that this type of practice alters the natural flavour of the fruit and the wine.
Winemaking
Viré-Clessé Quintaine wine is made from ripe fruit harvested by hand using artisanal and environmentally friendly processes. The fruit is then gently pressed to create a must that is cold decanted overnight to separate the clear juices from the lees.
Fermentation is alcoholic and malolactic and takes place naturally in cement or concrete tanks, using indigenous yeasts and bacteria. After fermentation, the wine is kept on its lees until bottled in early summer.
Taste
Guillemot Michel Viré-Clessé Quintaine is characterised as a fresh and crisp white wine. Its flavour and aroma are products of the union of Chardonnay grapes with herbs and plants of the same terroir, as well as the contact with the skin of ripe fruits and dried white flowers.
A special wine
This variety of wine is defined as a special and very particular example, due to its strange coarse texture. It is an ideal wine to be enjoyed as an accompaniment to rice dishes with fish or meat. It is served between 9 and 13 degrees in order to enjoy its flavour, texture and aroma to the maximum.
